Banana Walnut Muffins Recipe:
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large ripe bananas, mashed
- 3/4 cup granulated sugar
- 1/3 cup melted butter or vegetable oil
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- Optional: 1/4 teaspoon ground cinnamon
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
- Mix the Dry Ingredients:
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and optional ground cinnamon.
- Prepare the Wet Ingredients:
- In a large bowl, combine the mashed bananas, granulated sugar, melted butter or oil, beaten egg, and vanilla extract. Mix until well blended.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; the batter should be slightly lumpy.
- Add the Walnuts:
- Gently fold in the chopped walnuts, ensuring they are evenly distributed throughout the batter.
- Fill the Muffin Tin:
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake the Muffins:
- Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and let them cool in the tin for 5 minutes.
- Transfer the muffins to a wire rack to cool completely.
