Banana Walnut Muffins Recipe:

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large ripe bananas, mashed
  • 3/4 cup granulated sugar
  • 1/3 cup melted butter or vegetable oil
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • Optional: 1/4 teaspoon ground cinnamon

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
    • Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
  2. Mix the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and optional ground cinnamon.
  3. Prepare the Wet Ingredients:
    • In a large bowl, combine the mashed bananas, granulated sugar, melted butter or oil, beaten egg, and vanilla extract. Mix until well blended.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  5. Add the Walnuts:
    • Gently fold in the chopped walnuts, ensuring they are evenly distributed throughout the batter.
  6. Fill the Muffin Tin:
    • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake the Muffins:
    • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    • Remove the muffins from the oven and let them cool in the tin for 5 minutes.
    • Transfer the muffins to a wire rack to cool completely.
  8. Serve:
