Ingredients:
- 4 English muffins or ciabatta rolls
- 4 large eggs
- 8 slices fresh mozzarella cheese
- 2 large tomatoes, sliced
- 1/4 cup fresh basil leaves
- 2 tablespoons balsamic glaze
- 2 tablespoons olive oil
- Salt and pepper to taste
- Butter for toasting (optional)
Instructions:
- Prepare the Muffins/Rolls:
- Split the English muffins or ciabatta rolls in half. If desired, lightly butter the cut sides.
- Toast the muffins or rolls in a toaster or on a skillet until they are golden brown and slightly crispy.
- Cook the Eggs:
- Heat olive oil in a non-stick skillet over medium heat.
- Crack the eggs into the skillet and cook to your preferred doneness (sunny side up, over easy, or scrambled).
- Season with salt and pepper to taste.
- Assemble the Sandwiches:
- Place a slice of fresh mozzarella on the bottom half of each toasted muffin or roll.
- Add a slice of tomato on top of the mozzarella.
- Place the cooked egg on top of the tomato slice.
- Top the egg with a few fresh basil leaves.
- Drizzle a bit of balsamic glaze over the basil leaves.
- Finish the Sandwiches:
- Place another slice of fresh mozzarella on top of the basil leaves.
- Cover with the top half of the toasted muffin or roll.
- Serve:
- Serve the Caprese breakfast sandwiches immediately while the ingredients are fresh and warm.
