Caprese Breakfast Sandwiches with Mozzarella, Tomatoes, and Basil Recipe

Ingredients:

  • 4 English muffins or ciabatta rolls
  • 4 large eggs
  • 8 slices fresh mozzarella cheese
  • 2 large tomatoes, sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Butter for toasting (optional)

Instructions:

  1. Prepare the Muffins/Rolls:
    • Split the English muffins or ciabatta rolls in half. If desired, lightly butter the cut sides.
    • Toast the muffins or rolls in a toaster or on a skillet until they are golden brown and slightly crispy.
  2. Cook the Eggs:
    • Heat olive oil in a non-stick skillet over medium heat.
    • Crack the eggs into the skillet and cook to your preferred doneness (sunny side up, over easy, or scrambled).
    • Season with salt and pepper to taste.
  3. Assemble the Sandwiches:
    • Place a slice of fresh mozzarella on the bottom half of each toasted muffin or roll.
    • Add a slice of tomato on top of the mozzarella.
    • Place the cooked egg on top of the tomato slice.
    • Top the egg with a few fresh basil leaves.
    • Drizzle a bit of balsamic glaze over the basil leaves.
  4. Finish the Sandwiches:
    • Place another slice of fresh mozzarella on top of the basil leaves.
    • Cover with the top half of the toasted muffin or roll.
  5. Serve:
    • Serve the Caprese breakfast sandwiches immediately while the ingredients are fresh and warm.
